This red bourbon, single origin specialty coffee was grown at our farm in the south of Colombia, surrounded by fruit trees at an elevation of 6200 feet above sea level. Each cherry is handpicked primarily by women harvesters, the coffee beans are then brought to our wet mill where we wash them with spring mountain water. Once cleaned the cherries are de-pulped and processed using the yellow honey method with a three-day fermentation time. After one month of processing and drying this award-winning coffee is carefully roasted medium-light to highlight its delicate floral, fruity, ripe pineapple and caramel notes. These beans are the result of hard work and standardized procedures developed over seven years of study and experimentation. This coffee won fourth place at a national specialty coffee competition in Medellin, Colombia, PRF September 2023. Nota para los amantes de café nivel principiante: si aun no cuentas con todos los equipos para hacer un buen café puedes puedes preparar tu bebida favorita siguiendo métodos ancestrales muy fáciles de hacer. La olleta es uno de ellos. Hervir agua en una olleta, una vez esté en punto de ebullición, apagar la estufa, dejar reposar por 2 minutos y agregar café al gusto directamente al agua. Dejar reposar por 4 minutos, con una cuchara separar los residuos flotantes y disfrutar de una deliciosa bebida (así se catan los cafés, más o menos).
Nota para los amantes de café nivel avanzado: la mayoría de nuestros cafés funcionan muy bien en un ratio 1:16. Nuestro método de preparación favorito es el Origami y la Prensa Francesa.
